Add all ingredients to the shaker. Fill with ice and shake for 30 seconds.

45ml Sherry cask whisky 15ml Cream of coconut 20ml PX Sherry 20ml Coffee Liqueur 30ml Fresh espresso

Fill highball with crushed ice, strain shaker over top. Top with more crushed ice and grate over tonka bean or other aromat of choice.

Jack Jamieson, United Kingdom Prior to becoming a mixologist, Jack experimented with various cocktail recipes and showcased them on his social media. Over the years, he acquired knowledge of cultures and cuisines from people and distillers across the world, which influenced his approach to mixing flavours and experimenting with recipes. His fascination with botanical aromas, curious marketing and unrestricted access to bar accessories led him to learn mixology.

Samuel Cocks, Australia Sam has a passion for native botanicals and their various uses in cocktails. He launched Bar Rogue, the sister venue to the famed La Rebelle in Perth, where his venue has a wine focus - but includes a well-curated cocktail and spirit list. Samuel opened Volare in the Maylands suburb in 2022. His new venue takes on a coastal European-themed aperitif bar.

CK Kho, Malaysia CK Kho owns the Coley Cocktail Bar, a well-loved bar in Kuala Lumpur. Under CK's leadership, Coley bagged The 2017 Bar Awards ‘Best Hospitality Team’, ‘Best Cocktail Bar’, and ‘Bartender of the Year’ awards. The bar also made its way to the Asia's 50 Best Bars list, coming in at No. 46 in 2018, and No. 27 in 2019. CK continues to contribute to the rising bar scene in Kuala Lumpur with a second bar specializing in gin named Pahit.

Raspberry Mai Tai By Jack Jamieson 30ml Jamaican Dark Rum 30ml White Rum 20ml Blue Curaçao liqueur

Add all ingredients to the shaker and fill with ice. Shake for 30 seconds. Fill the highball with crushed ice and strain shaker into it. Top with more crushed ice. Garnish with fresh raspberries and some garden herbs.

Blossom Highball By Samuel Cocks 40ml White Calvados 20ml Banana Blossom Vinegar 100ml Pandan Soda

Add all ingredients into the highball glass then add ice.

Tipsy Coyote By CK Kho 30ml Montelobos Espadin 60ml Fresh watermelon juice 15ml White Vermouth 15ml Agave nectar 10ml Fresh lime juice Dill sprigs

Muddle the dill sprigs. Mix all ingredients together, add ice and shake. Garnish with mint leaves and serve.

Tamarillo Spritz By Samuel Cocks 30ml Gin 40ml Red Szechuan cordial 3x Lime Leaves 4x Slices Tamarillo 90ml Soda

Add all ingredients into a shaker then muddle in the lime leaves and tamarillo. Add ice then hard shake. Double strain then top up with soda.

Ape & Coffee By CK Kho 30ml Monkey Shoulder

Stir all ingredients together and add ice. Garnish with dill sprigs and serve.

Coffee Summer Cup By Jack Jamieson 40ml VSOP Cognac 30ml Rosso Vermouth 30ml Dry Curaçao Liqueur

Take a lemon and cut off a small circle of peel. Add to the base of the highball. After that, add 1 tsp of brown sugar and muddle with the peel until the sugar starts to dissolve. Then, add 10ml fresh espresso and stir to dissolve sugar. Add the rest of the ingredients and fill with ice, stir and top up with grapefruit soda.

10ml Espresso 1 lemon coin 1 tsp light brown sugar Top up with grapefruit soda

Penicillin Pigeon By Jack Jamieson 40ml Glenmorangie 10-year-old Single Malt Whisky (Unpeated Speyside) 20ml Ardbeg 10yo Single Malt Whisky (Peated Islay) 20ml Ginger Liqueur 15ml Honey syrup (2:1 honey:water) 20ml Fresh lime juice Top with grapefruit soda Black salt

To the shaker, add all but the Islay whisky and grapefruit soda.Fill with ice and shake for 30 seconds. Run the spent lime husk around the rim of the glass and scatter over some black salt. Fill the highball with ice and strain into the glass. Top with grapefruit sofa and serve.
